Our Chef

Shigene Sumitake

Born in the family operating "KAKUSHO", one of two most prestigious restaurants in Takayama, he has served as head of chefs in several places including "KAKUSHO".

Prior to joining his family business, he was trained in a very famous Kaiseki restaurant in Kyoto called "HYOTEI" (three-Michelin-star restaurant) for 5 years. During the period, he had managed private Kaiseki catering for VIPs such as masters of tea ceremony, important political and business figures.

​Kaiseki is a traditional Japanese Multi-course dinner, which offers a special dining experience. The ingredients used in Kaiseki Dinner are all high quality and mostly local seasonal products. 

 

Kaiseki is known as the ultimate style of Japanese food, and both the preparation methods and appearance are refined. It is also registered by UNESCO as one of the World's Intangible Cultural Heritage. 

We offer rather informal Kaiseki as we believe that Kaiseki Dinner should become more accessible to travelers in a casual manner.
